Heading to Cuba in a couple days....anyone have any suggested "must see's" or "must do's" to recommend?

A must-do is bring cash. No ATM's there. But hopefully you knew this already.
Another must do: do not give anything to any of the locals, even a pack of gum, or you will get mobbed.

Just got back a few weeks ago and unfortunately I didn't get to see as much as I wanted to. I had a great time touring Havanna though. I personally went on a private tour as running around on a little scheduled 4 hour tour is not for me. I'd suggest it, as I got to see a lot more of the city and got to see how the people really lived. A couple more bucks but I found it worth it for myself.

Ya, I'm actually staying in Havana so that I can see the city, the people, etc....I'm sure I'll spend some time on the beach, but want to experience the culture.
We're probably going to rent a car/motorcycles to tour the island....

Havana is amazing but very poluted and smoggy from all the old cars. Some tips:
renting a car from one of the approved government car rental agencies is a waste of money. If you want to be mobile, rent mopeds. OR, hire a private citizen to chauffeur you around, believe it or not, its a lot cheaper than renting a car. Be careful though because it is illegal, tourists are not supposed to be in passenger cars with Cubanos. However, it is a common practice that is done all over, your car will likely have the windows all tinted so nobody can see in. Just ask around you should be able to find somebody. Also, bring toilet paper with you when you go out, there isn't any in public washrooms, definite necessity. And bring lots of CANADIAN cash, American cash is subject to a new tax when you exchange it and the banks are a pain in the ass and you can only do Visa cash advances. None of the few scarce ATM's ever work. So bring all your money in Canadian cash.
