I just returned from Puerto Vallarta a couple weeks ago...stayed for two weeks...
VERY humid this time of year but I LOVED IT!! We had a great time. Overcast in the morning, beautiful in the afternoon, and some wicked storms sometimes at night.
For two weeks, two people, all inclusive, ocean-view top-floor room w/ king sized bed, including direct flight w/ free drinks on the plane, medical insurance, AND taxes, we paid a grand total of:
$3,100 CAD

If you are going to DR, punta cana has the nicer beaches (from punta cana to samana) but it's quieter. The best nightlife can be found at puerto plata.
You have to consider that not all the places that have been recommended offer all-inclusive resorts. You can do all inclusive in costa rica in Liberia (not san jose).
If you wanna do an all inclusive that's not typical (like ibiza, morroco, puerto rico) check out club med. they have them almost everywhere, but it's a lil more pricier.
I'd recommend Cabo San Lucas or Ixtapa Zihuatenejo. In Mexico or DR(puerto plata) or Cuba ( Varadero/Havana split package with signature).

Allot of those places are geting quite far (and pricey) from home.
If you're tired of Mexico ( I personally like Mazatlan better than Puerto Vallarta), why not Hawaii? You're going to pay US prices either way. They don't generally have all-inclusive, but you'll find good deals on flight and hotel combos.
