I would strongly suggest getting married legally in Canada first, then having a symbolic ceremony in Mexico.
2 reasons: their stupid rules, and it's cheaper!
For most places you have to be there 3-4 days before your wedding day...
some others:
"Blood tests: These must be done locally in Mexico"
4 witnesses
"get your certificate 'legalized' in Mexico to ensure it is legally accepted when you get back home"
Some resorts will give you a wedding for "free" if you book at least 5 rooms at a certain rate/level, etc. Lots of fine print. Most resorts will charge anywhere from $1,000 to $2,500 US for the wedding there. Renewal of Vow ceremonies run a lot cheaper (under $1,000)
I'd get yourself an amazing travel agent who is very experienced in group travel/weddings, and a resort wedding planner who actually knows what they're doing!!!!
A really good source is the WeddingBells website, they have their own Destination Weddings forum (and it's all canadian!)

On a side note, I got my dresses now!
I got the first one, and it didn't fit  I worked really hard, lost 5 lbs last week, and it fits  Good thing I have over a year to go before I wear it!!!

Sissy.. make sure you have someone who can tie up the corset properly. My makeup artist couldn't/didn't tie mine tight enough and so I'm a little dissapointed with how it looks in the photos.
There both really pretty, love the back of the first one. How fun to get to wear two completley different styles!

SexyChilena, I'd phone around the travel agents and see what they can do for you. They will probably be the most educated on weddings in Mexico, and will be able to provide you with more information than a wedding planner who's never dealt with a Destination Wedding before. What tour group are you going with? What resort have you picked? You can always email the resort's wedding planner and see what they have to say as well!
We haven't done much booking a destination wedding yet. That's one thing I'm really laid back about, where ever it happens, it happens!
As for our Reception at home, here's a copy/paste of what I just wrote on another forum:
We've had one heck of a time finding a venue for our wedding.
We had the chance to use a barn for free from a friend of the family, unfortunately that didn't pan out - it wasn't really set up for weddings! We searched and searched and searched, and found a Ranch that does weddings - they weren't available for our date, and have since decided to stop doing weddings. Boo. FINALLY we found an awesome location (woohhoo) It's the UBC Boathouse...
All it is is a hall really, but it's BEAUTIFUL!
I went and saw it a few months back. The pricing was a little steep ($1,100 for 8 hours - and that doesn't include time to set up *which you have to pay for too *- and they won't let you set up the night before!!!) Needless to say I don't think they've done too many weddings!!
I asked then If I could put a deposit down to secure my date. The man told me They weren't booking in 2008 yet, and to get back to them 1 year to the date of our reception.
He also said that they only had 10 banquet tables, and 50 chairs, so we'd have to look into renting more. No prob!
Today I get a phone call.
It's a lady who has taken over from the man I talked to previously.
She phoned to tell me the rates are going up for 2008, and that she would need a deposit of $800 to hold my spot asap.
She wanted me to put the $800 on my credit card over the phone - NO THANKS! I'd rather go in there and have some things written on paper BEFORE putting down that large of a deposit!!!

When we were planning on having the whole shindig here, having the night before to set up was a must.
Now that we'll actually be married already, and this will just be a big party celebrating that... I'm a LOT more laid back. We will be doing our photos before the ceremony/reception, so we're gonna see each other anyway. I'm not too worried about it.
With the venue like that all we're going to have to do is set up the tables & chairs, food tables, etc. There won't be much decor other than that
