Canadian heading to Australia in October

I am spending 6 weeks in New Zealand, but in that time I definitely plan on flying to Australia. Where are the places to party? Sightseeing? I will probably fly to Sydney and either go to Melbourne or the Gold Coast. A week isn't a lot of time but what can I do and where can I go to get a true Australian experience.

lol @ Crocodile Dundee. Seriously though. I figure I could extend my leave from work an extra month and stay in Australia for 2-3 weeks.
