i just do:
- 2 cans chicken broth or veggie (canned, low sodium.. homemade is aways good)
- 2 chicken breasts, cooked, cubed
- 1 can cream of corn
- 1 can corn
bring to boil
whisk 3 - 4 eggs and drop in @ simmer, 4 mins.. don't stir it otherwise it looks really gross.

grab some bacon, dice it up, fry it in a pot with some oil, add a diced onion and some diced celery. saute until clear. add chicken stock, some frozen corn/canned corn, and a few cans of creamed corn. and a couple cubed potatoes and some pepper, thyme whatever.. simmer and add chicken if you like.. finish with heavy cream

Technically a chowder is thickened by potatoes, not a roux.

potatoes make the chowder... otherwise it would be cream of corn.
am I right?
I am a lover of rouxes though... they are magical thickening knowledge.
