Quick and Healthy Dinner Ideas for Busy People

This took me 15 minutes to make:
Green Mussels cooked in olive oil with Garlic
Cousos (sp) with tomatoe, pepper, cucumber and green onions in homemade greek dressing (low cal and low fat)
Green salad..... with pretty much every veggie in my fridge and a couple olives and a bit of olive oil and balsamic vinegar
AND leftovers for lunches tomorrow

Quick breakfast idea: I call it the protein plate.... takes 5 minutes
2 pieces of flax bread
4 egg whites scramble
2 turkey or chicken slices
1/2 tomatoe
1 avocado
Good toppings for the bread without having to add butter. Use the avocado as a spread for flavor and a bit of salt and pepper
